Generally, Mycelio sponsors courses oriented around issues of sustainability, ecological and environmental concerns, and alternative economic development. However in some cases, we accept groups with different interests, but who offer something enriching to the community, such as yoga retreats, dance workshops, or musical or artistic activities. Similarly, we may bring in groups or offer courses that simply bring money into the community in a way that encourages positive and/or sustainable growth, for example, courses on Oaxacan cooking or low-impact outdoor excursions.


Permaculture Design Course
Nov. 15-29, 2006

Are you interested in designing your own home and gardens? Are you interested in ecological sustainability? Have you ever wanted to live off your own land, growing and raising your own food? If so, a permaculture design course is for you. You will learn how to orient and build beautiful and comfortable natural buildings, how to make the best use of geographical features, what kinds of plants will best serve your needs and how they grow, how to incorporate energy efficiency into building plans, how to design your water and irrigation systems, and much more.

Come learn about permaculture in the heart of the colorful and vibrant Oaxacan culture. You will be studying with local Mexican farmers, environmentalists, and progressive Latin Americans. We will visit local farms, eat delicious Mexican food, and have time to play on the area's world-famous beaches. This course will focus on designing comfortable, multi-use spaces using a combination of natural building techniques, creative planting, and biotecture, planning for food production, art and patterns in nature, and we will take a special look at the hybridized technologies emerging at the crossroads of the developed and developing worlds: ingenuity, appropriate technology, indigenous knowledge, and a passion for local skills and solutions.

This will be a bilingual course taught in English and Spanish. Students interested in more hands-on experience with natural building are encouraged to sign up for the one-week natural building workshop immediately following this course.

Natural Building with Cob
Dec 3-9, 2006

This will be a week-long introductory workshop on building with cob, taught by James Thompson. James has been a teacher with the prominent natural building school in Oregon House Alive for the past 3 years. Cob is one of the oldest natural building techniques, in which monolithic walls are constructed by hand out of clay, straw, sand, and water. Cob buildings are found today in countries all over the world, including some that date over 1000 years in the middle east.

During this hands-on intensive you will learn cob construction with locally available materials, work alongside Mexican people, experiment with appropriate technologies, stay in a beautiful spot near the beach, and support sustainable building practices in this rural coastal area. During the workshop you can expect to learn how to build beautifully sculpted cob walls for cottages, garden walls, or studios. We will cover everything from finding and preparing materials to finishing it off with an earthen plaster. We will also spend ample time discussing foundations and roof systems, house design and appropriate technologies. This workshop is an ideal introduction to natural building, with lots of salsa - mix it up and have fun Mexican-style!!

House Alive has taught cob courses in Zipolite since 2004. During the course we will visit previous projects and talk to locals about their experiences with cob. Students who wish to practice some of the skills they have learned are welcome to stay on and help with the ongoing cob projects at Mycelio.

Traditional Oaxacan Cooking
April 15-21, 2007
400$ Course includes 5 gourmet dinners, a welcome party with food on the 15th, and all accommodations. Students are responsible for other meals and air fare.

Come learn how to cook authentic Oaxacan food from Javier and Paco, the owners of the Casa Mixtli, a local gourmet hideaway with rave reviews from Huatulco to Mexico City. Oaxacan food is famous for its mixture of tradition and innovation, featuring exotic food combinations and rich sauces and moles. In this course Paco will cover some of his most famous recipes, discussing traditional approaches and ideas for adding your own flavors and flair. Considerable time will be spent on moles and other sauces.

Paco and Javier relocated to Zipolite from Mexico City in 2004 to open Casa Mixtli with the goal of offering high quality gourmet food in a relaxed and comfortable beach environment. Cafe Mixtli is open Wed-Sat from November to April by reservation only. This year, they have agreed to finish their season with this one-week opportunity to enjoy their cooking in an informal and fun learning atmosphere. Don't miss it!

This course includes 5 meals that Paco will cook and teach for us. Students will help with the cooking and get personal attention each day. Some meals will be afternoon meals and some will be dinners, to allow students the freedom to try some of the other restaurants in the area. The cooking classes will be taught at Casa Mixtli, which will be closed to the public for the week. During the course students will have access to the Mycelio facilities to relax and use as they please, including the kitchen if people wish to cook for themselves.
